Hearty Salad Recipes

Do you ever crave for a food that is filling, nutritious and refreshing? It may seem like an impossible combo to find in one meal, but there is a dish that accomplishes all three requirements: Salad.

Salad is a meal that leaves you full and satisfied without feeling weighed down – plus the variety of salads you can come up with are endless!

Here are a few of my favorite hearty salad recipes:

Green Goodness:


  • 2 Cups baby spinach leaves – rinsed and dried
  • 1 Medium sized avocado
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 Tablespoons Lemon Juice
  • Pinch of salt
  • 1/4 Cup Roasted or Raw Pepitas


  1. Place spinach leaves into a medium sized bowl
  2. Pour the olive oil, lemon juice and salt over spinach leaves and mix well
  3. Halve your avocado and remove the pit. Cut each side in cubes and spoon out over the spinach leaves.
  4. Gently toss into the leaves, being careful not to mush the avocado pieces
  5. Sprinkle the pepitas on top of the salad

Super-food Salad


  • 2 Cups kale – rinsed, dried, and chopped
  • 1 Medium sized lemon – juiced
  • 1 Cup Cherry tomatoes – rinsed, dried and halved
  • 1/4 Cup raisins
  • 1/2 Cup sunflower seeds
  • 1 Tablespoon extra-virgin olive oil
  • Pinch of salt


  1. Place kale in medium sized bowl and pour lemon juice on top.
  2. Mix well and allow to sit for 10 minutes (Kale is a hearty green and allowing the lemon to absorb in will help to break it down which is important for the digestive system)
  3. Add tomatoes, olive oil and salt –  gently toss
  4. Sprinkle raisins and sunflower seeds on top

Waldorf Style Slaw:


  • 2 medium size fennel – cut julienne style
  • 4 carrots  – cut julienne style
  • 1 large size apple  – cut julienne style
  • 1/2 Cup walnuts – roughly chopped
  • 1/4 Cup lemon Juice
  • 1 Tablespoon extra-virgin olive oil
  • Pinch of salt


  1. Place fennel, carrot and apple in a medium size bowl
  2. Dress with olive oil, salt and lemon – toss together
  3. Add walnuts and gently toss
